CIFP La Merced offers a healthy European cooking plan

The Integrated Center for Vocational Training (CIFP) La Merced, in Soria, this morning concluded the “Cooking Health European Way” (CHEEP) initiative, an initiative to promote healthy cooking from the school in which it worked. since 2020 he has worked together with educational institutions from France, Poland and Italy under the Erasmus KA 201 program.

The objective of this project is to raise awareness about the importance of a healthy diet in order to act on the most common diseases and eating problems in today’s European society: obesity, food allergies, celiac disease and diabetes.

The delegate of the territory of the Junta de Castilla y Leon in Soria, Yolanda de Gregorio, attended the presentation this morning in the meeting hall of CIFP La Merced, accompanied by the director of the center, Maria Eugenia Lafuente Hernando, and Dr. Juan Manuel Ruiz Liso, standard bearer and great defender of medicine and healthy values ​​of the Mediterranean diet, as well as from the professors of Hospitality and Tourism and Industries, Henar Gómez Melgar and Carmen Lafuente Pérez, who participated together with the students in the development of research.

Similarly, the schools of the province of Soria, managers of hospitality and tourism companies and food industries and managers of the health sector also attended the event.

The director of CIFP La Merced, María Eugenia Lafuente, the activities carried out within the scope of this institute, received the books that the students prepared to transfer this new knowledge to the hotel and food industry, in addition, as the conclusions obtained from this research.

The students who participated in this project, for each country, made two typical menus for each pathology, which include recipes suitable for celiac disease, severe pain and diabetes. In total, there are 18 recipes with which the digital book will be made.

The presentation was organized on the same day in the four member countries of the project, when together with CIFP La Merced, the Pietro Piazza Panormi Institute (Italy), Zezpot Szkol Gdansk also developed this project. (Poland), the Consiglio Nazionale delle Ricerche and the Department of Psychology and Science of the University of Panormina, both in Italy, and the Lycée Hotelier de Dinard Ybon Bourges (France).

This initiative was born in Italy, in collaboration with the University of Panormione and the research center, to teach students healthy habits, culinary preparations suitable for pathologies such as severe pain, celiac disease or diabetes, together with the analysis of food intolerance.

CIFP La Merced had to accommodate the courses of different classes, which Erasmus teaches reflects the content of this experience. In the Soriano center, the project aims at students in training cycles of intermediate level in Cooking and Gastronomy and Higher Level in Kitchen Management, from hospitality and tourism family and intermediate level in Bakery, Pastry and Confectionery. The project “Cooking a Healthy European Path” started in October 2019, although CIFP La Merced joined in November 2020, and will last until the end of August of this year.
