In 1905, a boy named Frank Epperson in Oakland, California, left a glass full of water and soda with a wooden stick inside the refrigerator overnight. The next morning Frank found the frozen mixture, stirred it from the glass with a little hot water and got what we know today as a popsicle. He liked the idea so much that he continued to prepare it for himself and later, for his children.
In 1923 Frank implemented his invention (called Popsicles in English) and formed an alliance with Joe Lowe Co., who had great success in distributing it. Today we have a variety of popsicle flavors, including coconut lemonade, a flavor we will explore in our recipe today: delicious, full of good fats from the coconut and vitamin C from the lemon.

Ingredients
- 1 cup of cold milk cream
- 1/3 cup of condensed milk
- 125 grams of fresh or frozen blueberries
- 2 tablespoons of water
- Juice of 1/2 lemon

PREPARATION
Beat the heavy cream for 4 minutes, until it has a stiff consistency.
Prepare the blueberry jam by bringing the blueberries, two tablespoons of water and the lemon juice to low heat, cover and wait for approximately 8 minutes (if you decide to use sugar, it will also added at this point, I recommend not adding more than 1 tablespoon, because the blueberries are sweet and the ice cream contains condensed milk). When it’s ready, open it and if you want, mash the blueberries or leave them after cooking, the texture is delicious.
Remove the jam from the heat and let it cool to room temperature.
Mix the heavy cream, condensed milk and cold jam in an enveloping manner.
Once they are incorporated, transfer to a container for popsicles. Freeze for at least 2 hours.
When ready, serve and enjoy.
